Well it’s that time of year…Halloween!!! It has been so long since we’ve done anything for Halloween so we thought we would share a little something. Let’s start with possibly one of the easiest Halloween recipes. Halloween cocoa banana muffins are not only fun for the kids but a healthier alternative to bags of lollies and chocolates.
The best part of making banana muffins is using up the black overripe bananas you’ve forgotten about. In fact, they are just perfect and work way better for making banana muffins, cakes or breads than raw or just ripe ones. Overripe bananas also naturally sweeten these muffins. Hence, we’ve reduced the artificial sugars in our cocoa banana muffin recipe. Remember to take into account the sweetness of icing sugar used for decorating.
When the muffins are cooled, all you need is some icing sugar, food colouring and a little imagination. Recipes for family baking is what we absolutely love here on The Vegetarian Lab. This cocoa banana muffin recipe creates approximately 12 regular muffins or 30 mini muffins. Fill muffin trays nearly full if you’re after high domed-muffins. If you’re after flatter muffins to decorate, underfill and just make a few more muffins. Remember to fill any unused muffin tray moulds with water to ensure even baking and avoid scorching muffins.
