Can you tell I’m looking forward to summer? We’ve just hit spring and had our first warm weekend. Out comes my Nutribullet and a basket filled with fresh fruits from the market. I’m ready to go. One of my favourites would have to be mint watermelon slushies. The best thing about watermelon slushies is its natural sweetness and how refreshing it simply is. Without further ado, here’s my classic mint watermelon slushie.
Now your absolute must for this recipe is frozen watermelon cubes. It creates the perfect texture for your beautiful summer slushies. I suggest cubing and freezing as soon as you purchase your fresh watermelon. After all, this keeps it fresh and it’s ready to go whenever you’re in the mood for a thirst-quenching slushie. Make sure serve your slushies immediately after blending to retain its texture and consistency. The juice sinks and the watermelon pulp rises if you leave your slushie around for too long.
Watermelon goes so well with so many other flavours so you’ll never get bored. Not to mention, the colours of these slushies are just fantastic. Doesn’t it make you feel ready for Christmas? So if you’re having a special occasion or just feel like it, this awesome slushie goes perfectly with a shot or two of tequila. However, if you’re after different mocktail variation of this delicious drink, try adding a handful of strawberries.

- 2 and 1/2 cups frozen watermelon cubes
- 1/2 cup warm water
- 6-8 mint leaves extra to garnish
- 1 tablespoon honey or agave nectar (optional for extra sweetness)
- 2-3 wedges lime or lemon to serve (optional)
- 2-3 shots tequila (optional)
- 1/2 to 1 cup strawberries washed and hulled (optional)

- In the blender, combine watermelon, strawberries (if using) and warm water and blend until smooth. Add mint leaves, honey or agave nectar (if using) and tequila (if using) and blend for another 20 seconds.
- Serve immediately with lemon or lime wedges (if using).
