We made Halloween cocoa banana muffins for the kiddies earlier this month. Now, it’s time to share our cupcakes for the adults. These orange beet yogurt cupcakes would be terrific for a Halloween party. They are healthier yet deliciously moist even the kids would love it.
The combination of orange and dark chocolate chips gives these moist yogurt cupcakes a lovely flavour. Beetroot can be quite earthy on its own. Hence, we decided pairing it with orange and dark chocolate goes beautifully while sneaking in added nutrients and antioxidants. We will be using a quality beet powder in our recipe today for convenience. However, fresh beetroots work nicely, too. Beet powder is just a terrific way to avoid the mess. If you choose to go with fresh beets though, the hard work is worth it for its beautiful colour.
What we absolutely love about this recipe is the hidden goodness from orange, beet and dark chocolate. If you prefer an alternative to dark chocolate chips, try frozen blueberries. Dark chocolate chips and brown sugar gives this recipe the right amount of sweetness. Our orange beet yogurt cupcakes are so awesome, you really won’t even need any frosting. A nice dollop of cream and a hot cup of tea or coffee would go together nicely, too.
