Our spicy roasted pumpkin recipe could not get any better. Cooking pumpkin the right way really brings out its beautiful sweetness and flavours. Roasted pumpkin is such a comforting food. We love recipes that minimise wastage. So, we will be roasting and enjoying our pumpkin skin-on. Roasted pumpkin skin softens and caramelises so nicely. It’s almost the best bit.
This roast pumpkin recipe is so flavoursome with infused sweet chilli, honey and paprika. Our favourite pumpkin to use here is kent pumpkin cut into thick wedges. However, feel free to try any type of pumpkin, squash or even sweet potatoes. Just remember to adjust your roasting time accordingly.
Seasoned roasted pumpkins are mouth wateringly delicious on their own but pairing them with a beautiful sauce takes it to the next level. So, instead of just plain sour cream, add a dash of ground coriander and cumin. Don’t stop there, heap on crunchy mixed nuts and fresh coriander over your perfectly roasted pumpkin just before serving.
