Vegetarians should not be missing out on cottage pies or shepherd’s pies. Hence, we’re creating The Vegetarian Lab’s version of mashed potato-topped pie.
As I’ve recently learnt, a vegetarian shepherd’s pie is called shepherdess pie. There are so many great ways to make a vegetarian shepherd’s pie. Instead of mince meat, just use lentils, mushrooms, carrots and so on. Today, we’ll be using sweet potatoes and mushrooms, two of our favourite ingredients here on The Vegetarian Lab.
The key to making the best shepherdess pie is two parts; perfectly crusted mashed potato top and a delicious filling. The moisture from the mushrooms creates just the right amount of juiciness for this wonderful pie.
We love this shepherdess pie. It’s the perfect comfort food. Not to mention, shepherd’s pies work wonderfully as freezer meals for rainy days.
